Arugula Pesto

INGREDIENTS
3 Cups arugula leaves (cleaned)
1 cup parsley leaves
1/2 cup pine nuts (toasted)
1 cup Garlic Infused Extra Virgin Olive oil
plus extra
salt and freshly ground pepper.

DIRECTIONS
1.Place the arugula, parsley, and pine nuts in a blender or food processor, and puree. With the machine running, add the olive oil in a slow stream, adding more oil if necessary to get a smooth consistency. Season with salt and pepper.
