Q: How do I cook the beef?
A:
- Warm Scala’s Italian Beef gravy (au-jus) on LOW in steamer or pot until completely melted.
- Never let gravy come to a boil.
- Add Scala’s Italian Beef only as needed. (Scala’s Italian Beef is already cooked. Keeping it in gravy for an extended period of time will result in tough over cooked beef.)
- Using tongs or a fork, remove Scala’s Italian Beef from the gravy and place into bread.
- Dip ends of the bread into gravy and add appropriate garnish, such as Scala’s Giardiniera available in hot or mild mix.

A: Typically you should get 6-8 sandwiches per 2 pound kit.

Q: What is the shelf life of products?
A: Typically the shelf life of Enrico Formella and/or Olive It brand products is 18 months if unopened.
Oil based products once opened, are good for approximately 6 months as long as the product stays below the oil surface. These products can be refrigerated, but note that the oil will solidify when cold. It is best to bring the product to room temperature before using.
Vinegar based products once opened, are good for approximately 3 months. These products are
required to be refrigerated once opened.

Q: What does it mean when is says “Extra Virgin” Olive Oil?
A: “Extra Virgin” is the finest olive oil. It comes from the first pressing of the olives, and naturally has a lower acidity level of the olive oils.
